Buffalo Wild Wings vs Wingstop | Winging It

In 1964, Frank Bellissimo walked out of the walk-in refrigerator at the Anchor Bar in Buffalo, New York, carrying a box of chicken parts he expected to be necks and backs for his wife Teresa's spaghetti sauce. Instead, the supplier had sent wings—scrap meat that was cheap but awkward. Teresa decided not to waste the good meat. She cut each wing into two pieces, deep-fried them, and tossed them in a sauce she improvised from melted butter, cayenne, garlic powder, vinegar, and Worcestershire sauce. The sauce was too sharp, so she added more butter. Too mild, so she added more cayenne. She served the wings with blue cheese dressing to cut the spice and celery for color. The dish was an instant hit at the bar. That is the canonical origin story of the buffalo wing—part myth, part fact, but rooted in a real moment somewhere in Buffalo in the 1960s when someone had the idea that would change American bar food forever.

Show Notes

It’s the early 1980s, and a pair of brothers open a restaurant in Columbus, Ohio serving Buffalo wings. They see an opportunity to bring the spicy, tangy wings to diners around the country. The brothers are ambitious and Buffalo Wild Wings expands rapidly. A decade later, a couple in Texas gets a similar idea;  launching Wingstop in a suburb of Dallas.  But while Buffalo Wild Wings is focused on the full dining experience, Wingstop concentrates almost entirely on the wing itself.  And soon, the stage is set for the two restaurants to battle it out to be America’s King of Wings.
